Finalist – The Cathedral Grove Cocktail – Trumer Pils Beer Cocktail Competition Entry

Being new to NorCal after moving from the PNW we always gravitate towards the woodsier areas. One of our favorite spots of Muir Woods is the Cathedral Grove. A place to let your mind clear amidst incredible feats of nature. We wanted to capture that in a cocktail so for our entry into the Trumer Pils contest we give you the Cathedral Grove cocktail, a culmination of all things NorCal we love – Fernet, whisky, and beer.


Recipe:
1/4 oz ginger syrup*
1/2 oz Fernet Branca
2 dashes Regans Orange Bitters
1 1/2 oz Nikka Coffey Grain Whisky
4 oz Trumer Pils
Orange Peel
Charred Rosemary Sprig

Add ginger syrup, fernet, Bitters and whisky to a mixing glass. Stir with ice. Pour over into tumbler with cracked ice. Add Trumer pils. Spritz orange peel. Garnish with peel and rosemary sprig. Light rosemary sprig on fire let burn shortly then let smoke. .

*ginger syrup: (small batch)
55 grams fresh ginger
135 grams sugar (1/2 cup)
67.5 grams boiling water (1/4 cup)
Add all ingredients to a blender, filter through fine strainer or cheesecloth and bottle.
